Curried Corn Soup (Blender) Recipe.
- Raw Corn (cut from cobs); 2 cups
- Onion (finely chopped); 1 tsp or 15ml
- Milk; 1 cup or 250ml
- Butter; 2 tbsp or 30ml
- Curry powder; 1/2 tsp or 2ml
- Light Cream; 1 cup or 250ml
- Salt; 1/2 tsp or 2ml
- Pepper; 1/8 tsp or 0.5ml
- Chopped Parsley
Combine corn, onion and milk in medium saucepan.
Bring to a boil.
Turn down heat, cover and simmer for 20 minutes.
Pour into blender and buzz until nearly smooth.
Heat butter in same saucepan.
Add curry powder and cook gently for 3 minutes, stirring.
Stir in corn mixture, cream, salt and pepper.
Heat, stirring constantly.
Taste and add more seasoning if needed.
Serve Sprinkled with parsley.
Serves up to 3 persons.
