How To Make Cream Of Lettuce Soup

Learn How To Make Cream Of Lettuce Soup at Little Tips!

Cream Of Lettuce Soup Recipe.
  • Butter; 1/4 cup or 60ml
  • Finely Chopped Lettuce;  4 cups or 1L
  • Green Onions (finely chopped); 1 tbsp or 15ml
  • Flour; 2 tbsp or 30ml
  • Light Cream; 1 cup or 250ml
  • Chicken Stock; 2 cups or 500ml
  • Salt; 1/2 tsp or 2ml
  • Worcestershire sauce;  1/4 tsp or 1ml
  • Chives (chopped);  2 tbsp or 30ml
  • Croutons (Recipe Click Here)

Heat butter in medium saucepan.
Add lettuce and green onions and cook quickly, stirring constantly, just until lettuce is limp, about 1 minute.
Sprinkle flour and stir to blend.
Remove from heat and add cream and chicken stock all at once.
Stir to blend.
Return to moderate heat and bring to a boil.
Turn heat to low.
Stir in salt and Worcestershire sauce.
Simmer 3 minutes.

Stir in chives and ladle into soup cups.
Sprinkle with Croutons and serve immediately.

Serves up to 6 persons.
