How To Make Fish Chowder

Learn How To Make Fish Chowder at Little Tips!

Fish Chowder Recipe.
  • Bacon, cut up; 4 slices
  • Onion, sliced thin; 1 large
  • Haddock; 2 lb or 900g
  • Thinly sliced raw potatoes; 4 cups or 1L
  • Boiling water
  • Butter; 2 tbsp or 30ml
  • Flour; 1 tbsp or 15ml
  • Milk, scalded; 2 cups or 500ml
  • Salt; 1 1/2 tsp or 7ml
  • Pepper; 1/4 tsp or 1ml
  • Chopped parsley; 1/4 cup or 60ml

Put bacon pieces in large heavy saucepan.
Fry them until pan is well greased.
Add onion and cook for 3 minutes, stirring.

Remove skin and bones from haddock and cut into 1inch or 2.5cm pieces.
Add to saucepan along with potato slices.
Cover with boiling water.

Bring back to boil, turn down heat, cover and simmer gently just until potatoes are tender, about 15 minutes.

Blend butter and flour and add to chowder, bit by bit, stirring well after each addition.
Add hot milk, salt and pepper.
Taste and add more seasonings if desired.
Cover and simmer for 5 minutes.

Sprinkle with parsley and serve immediately.

Serves up to 8 persons.
