Country Soup Recipe.
- Butter; 2 tbsp or 30ml
- Water; 2 tbsp or 30ml
- Fresh green beans, cut on diagonal; 1/2 cup or 125ml
- Carrots, sliced thin; 2 medium
- Small thin slices turnip; 2 cups or 500ml
- Leeks, sliced paper thin (white part only); 2
- Finely chopped celery; 1/2 cup or 125ml
- Water; 1/2 cup or 125ml
- Fresh or frozen peas; 1/2 cup or 125ml
- Finely shredded green cabbage; 500ml
- Salt; 1 1/2 tsp or 7ml
- Pepper; 1/4 tsp or 1ml
- Paprika; 1/2 tsp or 2ml
- Milk; 4 cups or 1L
- Shredded lettuce; 1/2 cup or 125ml
- Chopped fresh dill; 2 tsp or 10ml
Heat butter in large saucepan.
Add 2 tsp or 30ml water and beans.
Cover and cook over high heat 3 minutes, shaking pan often.
Add carrots, turnip, leeks, celery and 1/2 cup or 125ml water.
Cover and cook about 7 minutes or until vegetables are nearly tender.
Add peas and simmer for 5 minutes.
Add cabbage, salt, pepper, paprika and milk.
Simmer for 5 minutes.
Stir in lettuce and heat.
Ladle into bowls and sprinkle with dill.
Serves up to 6 persons.
