Vegetable Chowder Recipe.
- Butter; 1/4 cup or 60ml
- Diced celery; 1 cup or 250ml
- Diced carrot; 1 cup or 250ml
- Diced potato; 1 cup or 250ml
- Diced turnip; 1/2 cup or 125ml
- Finely chopped onion; 1/4 cup or 60ml
- Thinly sliced leek; 1/4 cup or 60ml
- Boiling water; 1 cup or 250ml
- Salt; 2 tsp or 10ml
- Pepper; 1/2 tsp or 2ml
- Sugar; 1 tsp or 5ml
- Frozen peas; 1 cup or 250ml
- Slivered green pepper; 1 cup or 250ml
- Milk, scalded; 4 cups or 1L
- Chopped parsley; 1/4 cup or 60ml
- Grated old cheddar cheese; 1/2 cup or 125ml
Melt butter in large saucepan.
Add celery, carrot, potato, turnip, onion, leek, water, salt, pepper and sugar.
Cover and simmer until vegetables are tender crisp, about 10 minutes.
Add peas and green pepper and simmer 5 minutes more or until vegetables are tender.
Add hot milk.
Sprinkle in parsley.
Ladle into soup bowls and sprinkle each with grated cheese.
Serves up to 6 persons.
