How To Make Potato And Leek Soup

Learn How To Make Potato And Leek Soup at Little Tips!

Potato And Leek Soup (Blender) Recipe.
  • Butter; 3 tbsp or 45ml
  • Leeks (white part only), chopped; 4
  • Onion, chopped; 1 medium
  • Potatoes, diced; 4 large
  • Celery, chopped; 2 stalks
  • Parsley; 6 large sprigs
  • Chicken stock; 5 cups or 1.25L
  • Salt; 2 tsp or 10ml
  • Pepper; 1/4 tsp or 1ml
  • Dried leaf chervil; 1 tsp or 5ml
  • Dried leaf marjoram; 1/4 tsp or 1ml
  • Milk, scalded; 3 cups or 750ml

Melt butter in large saucepan and add leeks and onion.
Cook gently for 5 minutes, stirring.
Do not brown.

Add potatoes, celery, parsley, chicken stock, salt, pepper, chervil and marjoram.
Cover and cook over moderate heat about 30 minutes or until vegetables are tender.

Whirl in the blender or press through a sieve.
Return to saucepan.
Bring back to a boil and stir in hot milk.
Taste and add more salt and pepper if necessary.

Serves up to 8 persons.
