Shrimp Creole Soup Recipe.
- Butter; 2 tbsp or 30ml
- Chopped green pepper; 1/2 cup or 125ml
- Chopped green onions; 1/4 cup or 60ml
- Tomatoes, peeled and chopped; 6 medium
- Water; 1/2 cup or 125ml
- Salt; 1 1/2 tsp or 7ml
- Pepper; 1/4 tsp or 1ml
- Dried leaf thyme; 1/4 tsp or 1ml
- Dried leaf basil; 1/8 tsp or 0.5ml
- Fresh or frozen peas; 1 cup or 250ml
- Cornstarch; 2 tbsp or 30ml
- Cold water; 1/4 cup or 60ml
- Shrimp; 4 1/2 oz can or 115g can
Melt butter in saucepan.
Add green pepper and onions.
Cook gently for 3 minutes, stirring.
Add tomatoes, 1/2 cup or 125ml water, salt, pepper, thyme and basil.
Bring to a boil, turn down heat. cover and simmer until tomatoes are soft.
Add peas and simmer for 5 minutes more.
Add cornstarch to cold water and in a small jar with a tight lid.
Shake until well blended and stir into hot mixture gradually.
Simmer for 2 minutes.
Drain shrimp and rinse under cold water.
Add to soup and heat well.
Serve immediately.
Serves up to 6 persons.
