Curried Scallop Bisque Recipe.
- Butter; 1 tbsp or 15ml
- Curry powder; 1/2 tsp or 2ml
- Grated onion; 1 1/2 tsp or 7ml
- Tomato soup; 10 oz can or 284ml can
- Chicken stock; 2 cups or 500ml
- Scallops, thawed if necessary; 1 lb or 450g
- Milk; 1 cup or 250ml
- Light cream; 1/2 cup or 125ml
- Salt; 1/2 tsp or 2ml
- Pepper; 1/8 tsp or 0.5ml
- Chopped parsley; 2 tbsp or 30ml
Heat butter in medium saucepan.
Add curry powder and onion and cook gently 3 minutes, stirring.
Add tomato soup and chicken stock and bring to a boil.
Add washed scallops, cut if they are large, turn down heat, cover and simmer for 5 minutes.
Stir in milk, cream, salt and pepper and heat but do not boil.
Taste and add more salt and pepper if necessary.
Stir in 2 tbsp or 30ml parsley and serve immediately with more parsley sprinkled on each serving.
Serves up to 6 persons.
