How To Make Goddess Of Spring Soup

Learn How To Make Goddess Of Spring Soup at Little Tips!

Goddess Of Spring Soup (Blender) Recipe.
  • Diced peeled potatoes; 3 large
  • Diced celery; 1 cup or 250ml
  • Onion (sliced thin); 1 large
  • Leek (sliced thin); 1
  • Garlic (optional); 1 whole clove
  • Boiling water; 1 1/2 cups or 375ml
  • Chicken stock; 1 1/2 cups or 375ml
  • Salt; 2 tsp or 10ml
  • Pepper; 1/4 tsp or 1ml
  • Spinach leaves, packed;  2 cups or 500ml
  • Torn up iceberg lettuce, lightly packed; 2 cups or 500ml
  • Watercress leaves, loosely packed; 1 cup or 250ml
  • Milk; 2 cups or 500ml
  • Croutons (Recipe Click Here)

Put potatoes, celery, onion, leek and garlic in large saucepan.
Add water, chicken stock, salt and pepper and bring to a boil.
Turn down heat, cover and simmer 10 minutes.
Add spinach, lettuce and watercress, cover again and continue simmering for 15 minutes.
Whirl in blender, a little at a time, until smooth.
Return to saucepan. 
Stir in milk, heat to boiling point.
Serve very hot topped with Croutons.

Serves up to 8 persons.
