Country Pea Soup Recipe.
- Split green or yellow peas; 1lb or 450g
- Boiling water; 8 cups or 2L
- Tomato juice; 4 cups or 1L
- Ham bone, with a little meat (left over from cooked ham)
- Diced potato; 1 1/2 cups or 375ml
- Diced celery; 1 cup or 250ml
- Diced onion; 1 cup or 250ml
- Diced carrot; 1 cup or 250ml
- Bay leaf; 1 small
- Salt; 1 tsp or 5ml
- Pepper; 1/4 tsp or 1ml
Wash peas then put in large kettle.
Add water and tomato juice.
Bring to a boil, turn down heat, cover tightly and simmer until peas are soft, about 45 minutes.
Add ham bone and all remaining ingredients.
Cover again and simmer until vegetables are all tender, about 45 minutes.
Lift out ham bone.
Remove any pieces of meat from bone and return to soup.
Discard bone.
Taste and adjust seasoning (amount of salt depends on saltiness of ham)
Best serve hot, up to 8 persons.
