Corn Soup (Blender Recipe)
- Butter; 3 tbsp or 45 ml.
- Onion, sliced thin; 1 medium.
- Diced green pepper; 1/2cup or 125ml.
- Potatoes, sliced thin; 2 medium.
- Boiling water; 2 cups or 500ml.
- Milk; 2 cups or 500ml.
- Flour; 1 tbsp or 15ml.
- Bay leaf; small piece.
- Salt; 1 tsp or 5ml.
- Pepper; 1/4 tsp or 1ml.
- Cream-style corn; 19oz can or 540ml can.
Heat butter in medium saucepan.
Add onion and green pepper and cook gently for 3 minutes, stirring.
Add potatoes and water and bring to a boil.
Turn down heat, cover and boil gently for 15 minutes or until potatoes are tender.
Mix about 1/4 cup (60 ml) of the milk with the flour until smooth and stir into the boiling mixture.
Add remaining milk, bay leaf, salt, pepper and corn.
Simmer for 15 minutes.
Then discard bay leaf.
Whirl in blender only half at a time until nearly smoot.
